- 3/4 cup (160 grams) cream cheese
- 1/4 cup (30 grams) grated parmesan cheese
- 1 tablespoon olive oil
- 1–2 garlic cloves, minced
- 1/2 cup (120 ml) reserved pasta cooking water
- Salt and pepper to taste
- Optional: Chili flakes, fresh parsley for garnish
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente.
- Reserve about 1 cup of the pasta cooking water before draining.
- In a skillet over low heat, add olive oil and minced garlic; sauté for 2-3 minutes until fragrant.
- Stir in the reserved pasta water and cream cheese until well combined.
- Mix in parmesan cheese and stir until smooth.
- Toss the drained pasta into the skillet, coating it with the sauce. Adjust consistency with more reserved water if needed.
- Serve immediately with extra parmesan and freshly ground black pepper.
