  • 1/2 lb (225 grams) pasta (spaghetti, penne, fusilli)
  • 3/4 cup (160 grams) cream cheese
  • 1/4 cup (30 grams) grated parmesan cheese
  • 1 tablespoon olive oil
  • 12 garlic cloves, minced
  • 1/2 cup (120 ml) reserved pasta cooking water
  • Salt and pepper to taste
  • Optional: Chili flakes, fresh parsley for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente.
  2. Reserve about 1 cup of the pasta cooking water before draining.
  3. In a skillet over low heat, add olive oil and minced garlic; sauté for 2-3 minutes until fragrant.
  4. Stir in the reserved pasta water and cream cheese until well combined.
  5. Mix in parmesan cheese and stir until smooth.
  6. Toss the drained pasta into the skillet, coating it with the sauce. Adjust consistency with more reserved water if needed.
  7. Serve immediately with extra parmesan and freshly ground black pepper.
