- 1 pound raw shrimp (peeled & deveined)
- 1 tablespoon taco seasoning
- 14 ounces coleslaw mix
- ½ cup plain yogurt
- ¼ cup mayo (preferably avocado oil)
- 9 corn tortillas
- Fresh lime wedges (for serving)
Instructions
- In a medium bowl, coat shrimp with taco seasoning and garlic powder.
- For the sauce, mix yogurt, mayo, lime juice, cayenne pepper, and remaining taco seasoning in a small bowl.
- Heat a non-stick skillet over high heat with avocado oil. Cook the seasoned shrimp until pink and charred on both sides.
- In a large bowl, combine coleslaw mix with chopped cilantro and salt; add most of the sauce and mix gently.
- Warm tortillas in a skillet for about 10 seconds per side.
- Assemble tacos by placing shrimp and slaw in each tortilla; drizzle with remaining sauce before serving.
