Ingredients
- 2 cups digestive cookies or graham crackers
- ½ cup melted butter
- 3 cups fresh apple cider
- 3 bricks cream cheese
- 1 cup brown sugar
- 1 cup sour cream
- 3 large eggs
- Mulling spices (to taste)
- 2 tablespoons all-purpose flour
Instructions
- Boil apple cider with mulling spices until reduced to about 1/3 cup. Let cool.
- Preheat oven to 350°F.
- Crush cookies in a food processor; mix with melted butter, then press into a springform pan. Bake for 10 minutes and cool.
- Lower oven temperature to 325°F. Beat cream cheese and brown sugar until smooth; add sour cream, vanilla, salt, cinnamon, and reduced cider. Mix well.
