  • 1/4 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples
  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking sheet with nonstick spray.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, whisk melted butter and sugar until blended, then add egg, vanilla extract, and applesauce until smooth.
  4. Combine dry ingredients with wet ingredients until just mixed; fold in diced apples.
  5. Scoop batter onto the prepared baking sheet spaced apart.
  6. Bake for about 10 minutes until lightly golden brown.
  7. For the glaze, whisk powdered sugar and apple cider until pourable; brush over warm fritter bites.
  8. Broil for an additional 2–4 minutes until glaze caramelizes; apply remaining glaze before serving.
