  • 3 tablespoons all-purpose flour (for streusel)
  • 1 ½ tablespoons unsalted butter, cold and cut into cubes (for streusel)
  • 1 ½ tablespoons light brown sugar (for streusel)
  • 2 teaspoons granulated sugar (for streusel)

  • 1/4 teaspoon ground cinnamon (or pumpkin pie spice) (for streusel)
  • 1 ½ tablespoons diced apples (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the streusel topping by mixing flour, butter, sugars, salt, and cinnamon until crumbly; stir in diced apples.
  3. In another bowl, whisk together sour cream, pumpkin, apple juice, sugars, egg yolk, and vanilla.
  4. In a separate bowl, combine dry ingredients: flour, baking soda, salt, and spices.
  5. Fold dry ingredients into wet until just combined.
  6. Fill muffin tins two-thirds full and top with streusel.
