  • 12 slices of bread
  • 4 large eggs
  • 1 cup milk
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple extract
  • 1½ teaspoons cinnamon (divided)
  • ¼ teaspoon grated nutmeg
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a muffin tin with non-stick spray.
  2. Cut the bread into 1-inch cubes and set aside.
  3. In a mixing bowl, whisk together eggs, milk, heavy cream, brown sugar, vanilla extract, maple extract, reserved cinnamon, and nutmeg until smooth.
  4. Stir in the cubed bread until well coated.
  5. Fill muffin cups about three-quarters full with the mixture.
  6. In a small bowl, mix granulated sugar and remaining cinnamon; sprinkle over muffins.
  7. Bake for about 20 minutes until golden brown and firm to touch. Let cool slightly before serving.
