- 1/2 head of cauliflower (cut into bite-sized florets)
- 2 cups panko breadcrumbs
- 2 large eggs (whisked)
- 2 tbsp water
- 1/4 cup + 2 tbsp orange juice
- 1/4 cup granulated sugar
- 2 1/2 tbsp vinegar
- 1/8 cup low-sodium soy sauce
- 1 clove garlic (minced)
- 1/4 tsp ginger (minced)
- 1 tsp sriracha
- 2 tsp cornstarch + 2 tbsp water
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a bowl, whisk the eggs and set aside. Place panko breadcrumbs in a Ziploc bag.
- Dip each cauliflower floret into the egg mixture, allowing excess egg to drip off, then coat it with breadcrumbs in the Ziploc bag.
- Arrange the breaded florets on the prepared baking sheet and bake for about 15-20 minutes until golden brown.
- While baking, prepare the sauce by combining all sauce ingredients (except cornstarch) in a saucepan; bring to a boil while stirring.
- Mix cornstarch with water, then add it to the sauce until thickened.
- Drizzle sauce over baked cauliflower before serving.
