Ingredients
- 1 teaspoon Olive oil
- ½ cup sliced red onions
- 2 cups cooked shredded chicken breast
- ½ cup BBQ sauce
- 2 tortillas (10-12 inch)
- 2 tablespoons Butter (room temperature)
- 2 cups shredded cheddar-jack cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced red onions and sauté until softened (about 5 minutes).
- Stir in shredded chicken and BBQ sauce until well combined, then remove from heat.
- Butter one side of each tortilla, and place one tortilla butter-side down in another skillet over medium heat.
- Sprinkle ¼ cup cheddar-jack cheese on one half of the tortilla. Add half of the chicken mixture, followed by another ¼ cup cheese.
- Fold the tortilla in half and cook until golden brown (3-4 minutes). Flip gently with a spatula and cook until browned on the other side.
