  • 1 lb ground beef (85% lean)
  • 3/4 cup onions (diced)
  • 1 Tbsp garlic (minced)
  • 2 1/2 cups beef broth
  • 1 1/4 cups uncooked long grain white rice
  • 8 oz sliced button mushrooms
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 cups cheddar cheese (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot over medium-high heat, brown the ground beef with Italian seasoning, salt, and pepper. Drain excess grease.
  3. Add butter to the pot and sauté onions until soft; then add garlic for an additional minute.
  4. Stir in beef broth and rice; bring to a boil.
  5. Reduce heat, cover, and simmer for about 10 minutes; add mushrooms on top without stirring, then cover again until rice is tender.
  6. Mix in cooked beef, cream of mushroom soup, milk, sour cream, and half the cheddar cheese.
  7. Transfer mixture to a greased casserole dish, top with remaining cheese, and bake for about 20 minutes until bubbly.
