  • 2.5 kg (5 lb) standing rib roast (bone-in)
  • 150g (10 tbsp) unsalted butter
  • 5 garlic cloves (minced)
  • Fresh thyme and rosemary
  • 1.5 cups beef broth
  • 2.5 cups dry red wine
  • Salt and black pepper

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Allow the rib roast to reach room temperature for about an hour.
  3. Mix softened butter with minced garlic, herbs, salt, and pepper; rub all over the roast.
  4. Place quartered onion and halved garlic in a roasting pan as aromatics.
  5. Set the roast on top of the aromatics and pour the broth and wine around it.
  6. Roast until internal temperature reaches 120°F (49°C) for medium-rare.
  7. Let rest for at least 20 minutes before slicing.
