Ingredients
- 2.5 kg (5 lb) standing rib roast (bone-in)
- 150g (10 tbsp) unsalted butter
- 5 garlic cloves (minced)
- Fresh thyme and rosemary
- 1.5 cups beef broth
- 2.5 cups dry red wine
- Salt and black pepper
Instructions
- Preheat oven to 325°F (160°C).
- Allow the rib roast to reach room temperature for about an hour.
- Mix softened butter with minced garlic, herbs, salt, and pepper; rub all over the roast.
- Place quartered onion and halved garlic in a roasting pan as aromatics.
- Set the roast on top of the aromatics and pour the broth and wine around it.
- Roast until internal temperature reaches 120°F (49°C) for medium-rare.
- Let rest for at least 20 minutes before slicing.
