  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, mix oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined. Fold in 1 cup of chocolate chips.
  4. Add dry ingredients to wet ingredients and stir until just blended. Be careful not to overmix.
  5. Spray an 8"x4"x3" loaf pan with oil spray. Pour in the batter and sprinkle the remaining chocolate chips on top.
  6. Bake for approximately 50-60 minutes or until a toothpick inserted into the center comes out clean.
