  • 1 cup beer
  • 1/4 cup apple cider vinegar
  • 1/4 cup beef stock
  • 5 tbsp melted butter
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp paprika
  • 2 tbsp chili powder
  • 2 tbsp kosher salt
  • 2 tbsp coarse ground black pepper
  • 1 tbsp brown sugar

Instructions

  1. Preheat your Traeger grill to 225°F.
  2. In a bowl, mix together the rub ingredients thoroughly.
  3. Generously season the brisket on all sides with the spice rub.
  4. Place the brisket fat side down on the grill and cook until it reaches an internal temperature of 160°F (3–4 hours).
  5. Meanwhile, combine beer, apple cider vinegar, beef stock, and melted butter to create the baste.
  6. After reaching 160°F, wrap the brisket in aluminum foil and pour the baste around it before returning it to the grill until it reaches 204°F (another 3–4 hours).
  7. Let rest for 15 minutes before slicing against the grain and serving.
