  • 1/2 tsp. baking powder

  • 1/2 cup cold unsalted butter, cubed (8 Tbsp.)
  • 1/2 cup brown sugar, packed (light or dark)
  • 1/4 cup granulated sugar
  • 1 cup creamy peanut butter, like Jif or Skippy
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp. vanilla extract
  • 1 Tbsp. milk (optional)
  • 1 (10 oz.) bag peanut butter chips (I use Reese's brand) ~2 cups
  • 1/4 cup granulated sugar (for rolling)
  • Flaky sea salt (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  3. In a stand mixer, cream together cold butter, brown sugar, granulated sugar, and peanut butter until smooth.
  4. Mix in the egg, egg yolk, vanilla extract, and optional milk until well combined.
  5. Gradually add dry ingredients to wet mixture until fully incorporated.
  6. Gently fold in peanut butter chips.
  7. Scoop dough into balls (about 2-3 tablespoons), roll in sugar, and place on cookie sheets. Use a fork to create a criss-cross pattern.
  8. Bake for 9-11 minutes until golden brown; cool on sheet before transferring to a rack.
