Ingredients
- 1 3/4 cups all-purpose flour
- 1 tablespoon pumpkin spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 (15 oz) can pumpkin puree
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1/2 cup vegetable oil (or melted butter)
- 8 oz cream cheese (room temperature)
- 1/4 cup granulated sugar (for cream cheese mixture)
- 1 large egg yolk (for cream cheese mixture)
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 375°F and line a muffin pan with paper baking cups.
- In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
- In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until combined. Gradually add dry ingredients until just mixed.
- In another bowl, beat cream cheese with additional sugar, egg yolk, and vanilla until smooth.
