  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for cream cheese mixture)
  • 1 large egg yolk (for cream cheese mixture)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until combined. Gradually add dry ingredients until just mixed.
  4. In another bowl, beat cream cheese with additional sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin cups with batter about three-quarters full and add a tablespoon of cream cheese mixture on top; gently swirl with a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick comes out clean. Cool for 10 minutes before serving.
