  • 1 cup uncooked quinoa
  • 2 cans black beans
  • 1/2 cup sliced green onion
  • 1 cup chopped cilantro
  • 1 cup crumbled cotija cheese

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa with vegetable broth and cook according to package directions.
  2. In a large mixing bowl, whisk together lime juice, olive oil, minced shallot, honey, sea salt, and black pepper.
  3. Drain and rinse the black beans; chop the cilantro and crumble the cotija cheese.
  4. Fluff cooked quinoa with a fork and add it to the bowl with the vinaigrette. Toss in the beans, cilantro, and cotija cheese until well combined.
  5. Refrigerate for at least one hour before serving to allow flavors to meld.
