  • 3 heaping cups broccoli (finely chopped)
  • 1 1/2 heaping cups julienned carrots
  • 1/4 cup vegan butter
  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt the vegan butter in a large pot over medium heat.
  2. Sauté chopped onions and garlic until soft and fragrant, about 5-7 minutes.
  3. Gradually stir in flour to create a thick roux.
  4. Whisk in vegetable broth and rice milk until smooth and lump-free.
  5. Bring the mixture to a boil over medium heat while stirring occasionally.
  6. Add broccoli and carrots; cook for another 10 minutes until tender.
  7. Stir in the vegan cheddar cheese until fully melted.
  8. Blend about ¼ of the soup for creaminess, then return it to the pot and mix well.
  9. Season with salt and pepper to taste before serving hot.
