  • 2 cups rotisserie chicken (finely diced)
  • 4 ounces cream cheese (softened)
  • ¼ cup buffalo sauce
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)
  • 8 egg roll wrappers
  • Ranch or blue cheese dressing (for serving)

Instructions

  1. In a mixing bowl, combine the rotisserie chicken, cream cheese, buffalo sauce, cheddar cheese, mozzarella cheese, and ranch seasoning. Mix until well blended.
  2. Place about ⅓ cup of the filling onto the center of each egg roll wrapper. Moisten the edges with water.
  3. Fold the bottom corner over the filling, then fold in the side corners and roll tightly to seal.
  4. Preheat your air fryer to 400°F. Spray the egg rolls with cooking spray and cook for 3-4 minutes on each side or until golden brown.
