- 1 medium head of cauliflower (cut into florets)
- 3 Tbsp. unsalted butter
- 1 yellow onion (finely chopped)
- 3 garlic cloves (minced)
- 2 tsp. freshly grated ginger
- 2 Tbsp. tomato paste
- 1 can (8 oz.) tomato sauce
- 2 cups vegetable broth
- 1/2 cup heavy cream (or full-fat coconut milk)
- Spices: garam masala, cumin, turmeric, paprika, and cayenne pepper
Instructions
- Prepare cauliflower by mixing lemon juice, cornstarch, cumin, turmeric, garam masala, and salt in a bowl.
- In a large skillet, heat olive oil and sauté cauliflower until browned and tender.
- In the same skillet, add butter and onions; cook until translucent. Stir in garlic and ginger followed by tomato paste.
- Add remaining spices, tomato sauce, and vegetable broth; bring to a boil.
- Stir in heavy cream and return the cooked cauliflower to the skillet; simmer until thickened.
