  • 1 medium head of cauliflower (cut into florets)
  • 3 Tbsp. unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 tsp. freshly grated ginger
  • 2 Tbsp. tomato paste
  • 1 can (8 oz.) tomato sauce
  • 2 cups vegetable broth
  • 1/2 cup heavy cream (or full-fat coconut milk)
  • Spices: garam masala, cumin, turmeric, paprika, and cayenne pepper

Instructions

  1. Prepare cauliflower by mixing lemon juice, cornstarch, cumin, turmeric, garam masala, and salt in a bowl.
  2. In a large skillet, heat olive oil and sauté cauliflower until browned and tender.
  3. In the same skillet, add butter and onions; cook until translucent. Stir in garlic and ginger followed by tomato paste.
  4. Add remaining spices, tomato sauce, and vegetable broth; bring to a boil.
  5. Stir in heavy cream and return the cooked cauliflower to the skillet; simmer until thickened.
