  • 2 large eggs, room temperature preferred
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups (160g) pecan halves, very finely chopped
  • 1 ½ cups (340g) unsalted butter, softened
  • 6 oz cream cheese, softened
  • ⅓ cup (66g) light brown sugar, firmly packed
  • 1 ½ teaspoons vanilla extract
  • ¼ teaspoon salt
  • 4 ½ cups (562g) powdered sugar
  • 1 Tablespoon heavy cream
  • ⅓ cup (35g) pecan halves, very finely chopped, optional

Instructions

  1. Melt 1 cup of unsalted butter over medium-low heat until golden brown specks form. Preheat your oven to 350°F (175°C) and grease three 8-inch round baking pans.
  2. In one bowl, whisk together 3 cups cake flour, 1 cup granulated sugar, 1 cup light brown sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, and 1 teaspoon salt.
  3. Combine the browned butter with the dry ingredients. In another bowl, mix together 1½ cups buttermilk, 2 large eggs, and 1½ teaspoons vanilla extract. Gradually add this mixture to the dry ingredients along with 1½ cups finely chopped pecans.
  4. Divide the batter among the prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Allow cooling completely before frosting with cream cheese frosting.
