  • 1 ring (13.5 ounces) andouille sausage, sliced
  • 1 large onion, diced
  • ½ cup diced celery
  • ½ red bell pepper, diced
  • 2 teaspoons garlic, minced
  • 4 cups chicken broth
  • 4 large russet potatoes, cubed
  • ½ cup heavy whipping cream
  • 1 cup mild cheddar cheese, shredded

Instructions

  1. In a heavy pot or Dutch oven over medium heat, add vegetable oil. Sauté the sliced andouille sausage until browned.
  2. Add the diced onion, celery, red bell pepper, and minced garlic; cook for about 5 minutes until softened.
  3. Stir in Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper.
  4. Pour in chicken broth and add cubed potatoes. Bring to a boil, then reduce heat to low and simmer for about 30 minutes until potatoes are tender.
  5. Stir in heavy whipping cream and shredded cheddar cheese until fully melted.
  6. Serve hot garnished with chopped parsley.
