  • 1/8 tsp cayenne pepper
  • 1/8 tsp freshly cracked black pepper
  • 1 15oz. can fire roasted diced tomatoes
  • 1 cup long grain white rice
  • 1.5 cups chicken broth
  • 2 green onions, sliced

Instructions

  1. Brown the sliced sausage in a deep skillet over medium heat until browned.
  2. Add diced bell pepper and sauté for one minute until softened.
  3. Stir in spices and toast for another minute.
  4. Combine fire roasted tomatoes, rice, and chicken broth; stir well.
  5. Bring to a boil, then reduce heat and simmer covered for 20 minutes.
