Ingredients
- 1 cup chopped onions
- 2 chopped bell peppers
- 1 cubed avocado (optional)
- 1 1/2 cups uncooked rice
- 2 sweet potatoes, cubed
- 1/3 cup tahini
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook rice according to package directions and set aside.
- Preheat oven to 415°F (210°C). On a parchment-lined baking sheet, toss sweet potatoes with olive oil and Cajun seasoning. Bake for about 20 minutes until tender.
