  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. For the crust: Mix graham cracker crumbs, melted butter, sugar, and cinnamon; press into the pan and bake for 10 minutes.
  3. For the cheesecake filling: Beat cream cheese until smooth; add sugar, eggs (one at a time), and vanilla until well combined.
  4. Prepare apple layer: Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg.
  5. Assemble: Pour cheesecake filling over the crust, add apple mixture on top, then sprinkle crumble topping made from flour, brown sugar, cold butter, and pecans.
  6. Bake for 35-45 minutes until edges are set but center is slightly jiggly. Cool completely before slicing.
