Ingredients
- 6 bone-in, skin-on chicken thighs
- 1½ cups long-grain white rice
- 1 cup coconut milk
- 1½ cups chicken broth
- 1 medium onion
- 3 garlic cloves
- 2 bell peppers (red and green)
- Spices: paprika, allspice, thyme, garlic powder
- Scotch bonnet pepper (optional)
Instructions
- Season chicken with salt, pepper, paprika, allspice, and garlic powder.
- In a large skillet or Dutch oven, heat oil over medium-high heat and brown chicken on both sides (about 5-7 minutes each). Remove from skillet.
- Sauté onion, garlic, and bell peppers in the same skillet for about 4 minutes until softened.
- Stir in thyme, allspice, smoked paprika, rice, chicken broth, coconut milk, and salt. Mix well.
- Return browned chicken to skillet. Bring to a boil, then reduce heat to low. Cover tightly and simmer for 30-35 minutes until rice is tender.
- Optional: Add frozen peas in the last few minutes of cooking for added color.
- Fluff rice before serving and garnish with sliced green onions and fresh cilantro.
