  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar until smooth. Whisk in the egg and vanilla extract.
  3. In another bowl, mix flour, cinnamon, baking powder, and salt. Gradually add this to the wet mixture until just combined.
  4. Fold in shredded carrots gently.
  5. Pour batter into the prepared pan and smooth the top. Bake for about 40 minutes or until a toothpick inserted in the center comes out clean.
  6. While baking, prepare the cream cheese frosting by beating together cream cheese, granulated sugar, egg yolk, and vanilla until smooth.
  7. Allow bars to cool completely before spreading the frosting on top.
