- 20 oz. refrigerated three cheese tortellini
- 2 Tbsp extra virgin olive oil
- 1 medium yellow onion (chopped)
- 2 ears corn (kernels cut from cobs)
- 2 cups grape tomatoes
- 2 medium zucchini (sliced)
- 3 garlic cloves (minced)
- 1 1/4 cups marinara sauce
- Salt and black pepper to taste
- Fresh basil and parsley for topping
- 1/2 cup finely shredded parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Cook tortellini one minute less than package instructions.
- In a sauté pan, heat olive oil over medium-high heat. Sauté chopped onion for about 3 minutes.
- Add corn and cook for another 2 minutes. Then add tomatoes and zucchini; sauté until tender.
- Drain tortellini, reserving some pasta water. Combine cooked tortellini with sautéed veggies and marinara sauce in the pan.
- Toss gently for 1-2 minutes until heated through; add reserved pasta water if needed.
- Season with salt and pepper, then mix in half of the parmesan cheese and fresh herbs before serving.
