Ingredients
- 1 pound ground beef
- 12 ounces shredded cheese blend (cheddar, Monterey Jack, and pizza mozzarella)
- 6 flour tortillas
- 1/2 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground chipotle chili pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cayenne pepper
- 1 tablespoon tomato paste
- 2 tablespoons unsalted beef stock/broth
- 2 tablespoons vegetable oil (for greasing pan)
- Salsa, guacamole and/or sour cream (for serving)
Instructions
- Preheat oven to 200°F to keep cooked quesadillas warm.
- In a large non-stick pan, heat olive oil over medium heat and cook ground beef with spices until no longer pink.
- Stir in tomato paste and beef broth; remove from heat.
- Assemble quesadillas by placing cheese on one half of each tortilla followed by the beef mixture and more cheese.
- Fold tortillas in half and cook in the pan with vegetable oil until golden brown on both sides.
- Keep warm in the oven while cooking remaining quesadillas.
