- 1 pound ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2¼ cups beef broth
- 1 (10 oz) can Rotel
- 2 tablespoons tomato paste
- 1½ cups long-grain white rice (dry)
- 2 cups shredded cheese
Instructions
- In a large skillet over medium-high heat, heat olive oil and cook the ground beef and onion until the beef is no longer pink and the onion is translucent (about 8-10 minutes). Drain excess grease.
- Add minced garlic and taco seasoning; stir for about 30 seconds to combine.
- Mix in beef broth, Rotel, and tomato paste; bring to a boil.
- Stir in the dry rice and return to a boil. Cover and reduce heat; simmer for about 15 minutes until rice absorbs most of the liquid.
- Sprinkle shredded cheese on top; cook for an additional 5 minutes until melted.
