  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and cook the ground beef and onion until the beef is no longer pink and the onion is translucent (about 8-10 minutes). Drain excess grease.
  2. Add minced garlic and taco seasoning; stir for about 30 seconds to combine.
  3. Mix in beef broth, Rotel, and tomato paste; bring to a boil.
  4. Stir in the dry rice and return to a boil. Cover and reduce heat; simmer for about 15 minutes until rice absorbs most of the liquid.
  5. Sprinkle shredded cheese on top; cook for an additional 5 minutes until melted.
  6. Serve hot with toppings like sour cream, guacamole, or cilantro.
