  • 1 1/4 cups blueberries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped red onion
  • 1 cup chopped cucumber
  • 6 tbsp olive oil (for vinaigrette)
  • 1/4 cup balsamic vinegar (for vinaigrette)
  • 1/2 clove garlic, minced (for vinaigrette)
  • 1 tbsp honey (for vinaigrette)
  • 1/4 tsp salt (for vinaigrette)
  • 1/8 tsp pepper (for vinaigrette)
  • Salt and pepper (to taste)

Instructions

  1. Prepare the vinaigrette by whisking together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper in a bowl or mason jar. Set aside.
  2. Season chicken breasts with salt and pepper. Grill over high heat for 6-8 minutes on each side until cooked through (165°F internal temperature). Allow to rest before slicing.
  3. In a large mixing bowl, combine mixed greens, blueberries, red onion, cucumber, and feta cheese. Top with sliced chicken.
  4. Drizzle with prepared vinaigrette and toss gently to combine. Serve immediately.
