  • 2 tbsp olive oil
  • 1 1/2 lb Springer mountain farms chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten free farfalle pasta
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. In a large pot, boil pasta according to the directions on the box for al dente.
  2. Place all chicken seasonings into a small bowl and mix. Combine paprika, oregano, garlic powder, thyme, salt, and pepper.
  3. Pound chicken down slightly to thin it out. Then season both sides with the prepared seasoning mixture.
  4. In a large skillet, heat olive oil over medium heat. Once hot, sear the chicken for about five minutes on each side.
  5. After searing both sides, lower the heat slightly to medium-low. Cover with a lid and cook for an additional 10–12 minutes until the internal temperature reaches 165 degrees Fahrenheit. Remove from pan and place onto a cutting board.
  6. Add butter to the pan and allow it to melt. Once melted, add shallots, garlic powder, and Italian seasoning. Stir well and simmer for one minute.
  7. Mix in gluten-free flour while scraping the bottom of the pan. Pour in chicken broth and heavy cream, whisking until smooth.
  8. Add shredded parmesan cheese into the sauce, stirring until fully melted. Allow it to cook while stirring until desired consistency is reached.
  9. Pour cooked pasta into the sauce, tossing well to coat evenly. Add pasta water one tablespoon at a time if needed to thin out sauce.
  10. Slice seared chicken breast and add it to the pasta mixture. Carefully stir everything together before serving!
