  • 1 pound chicken breasts (skinless & boneless)
  • 2 cups shiitake mushrooms (sliced)
  • 1 cup Chinese cabbage (shredded)
  • 1 cup carrots (julienned)
  • 2 tablespoons soy sauce
  • 16 ounces lo mein noodles
  • 1 tablespoon brown sugar (packed)
  • 2 tablespoons soy sauce (low sodium)
  • 2 tablespoons dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon hoisin sauce
  • 1 teaspoon ground black pepper
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger (minced)
  • 3 cloves garlic (minced)
  • 3 green onions (chopped)

Instructions

  1. Cook the lo mein noodles according to package instructions; drain and set aside.
  2. Whisk together all sauce ingredients in a small bowl and set aside.
  3. Marinate chicken pieces with soy sauce, ginger, and garlic in a medium bowl.
  4. Heat olive oil in a wok over high heat; cook marinated chicken until browned and no longer pink. Transfer to a plate.
  5. Stir-fry mushrooms, cabbage, carrots, and onion in the wok for about one minute.
  6. Add cooked chicken back into the wok along with drained noodles and prepared sauce; toss until heated through.
  7. Garnish with chopped green onions before serving.
