- 1 1/4 lbs chicken breast
- 1/4 cup all-purpose flour
- 2 Tbsp olive oil
- 2 Tbsp unsalted butter
- 8 oz brown button mushrooms
- 3/4 cup dry marsala wine
- 3/4 cup reduced-sodium chicken stock
- 1/2 cup heavy whipping cream
Instructions
- Cut chicken breasts in half to create cutlets, then pound to 1/3" thickness. Season with salt and pepper, dredge in flour.
- Heat olive oil and butter in a large pan over medium heat. Sauté chicken until golden brown and cooked through (3-4 minutes per side). Transfer to a plate.
- In the same pan, add mushrooms and sauté until golden (about 5 minutes). Stir in onion powder and garlic; cook until fragrant.
- Pour in marsala wine, scraping the bottom of the pan, and reduce for about 4-5 minutes. Add chicken stock and cream; simmer until thickened.
- Return chicken to the pan, spoon sauce over it, and heat for an additional 2 minutes before serving.
