Description

Garlic Parmesan Chicken Meatloaf is a delightful and cheesy twist on the classic dish, perfect for family dinners or meal prepping.


Ingredients

  • 1.5 lbs ground chicken
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese (plus extra for topping)
  • 3 cloves garlic, minced
  • 1 egg
  • ¼ cup milk
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf on the prepared baking sheet or press it into a greased loaf pan.
  4. Bake for 35-40 minutes or until firm to touch and cooked through.
  5. Add extra mozzarella on top and return to the oven for an additional 5-7 minutes until melted.
  6. Allow to rest for 5 minutes before slicing and serve garnished with fresh parsley.
