- 1.5 lbs ground chicken
- ½ cup breadcrumbs
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese (plus extra for topping)
- 3 cloves garlic, minced
- 1 egg
- ¼ cup milk
- 1 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
- In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and pepper. Mix until just combined.
- Shape the mixture into a loaf on the prepared baking sheet or press it into a greased loaf pan.
- Bake for 35-40 minutes or until firm to touch and cooked through.
- Add extra mozzarella on top and return to the oven for an additional 5-7 minutes until melted.
- Allow to rest for 5 minutes before slicing and serve garnished with fresh parsley.
