- 3–4 garlic cloves, minced
- 2-inch piece of ginger, minced
- 2 cans (14oz) diced tomatoes
- 2 cans (14oz) chickpeas, drained and rinsed
- 1 can (15oz) coconut milk
- Spices: cumin seeds, turmeric, garam masala, cayenne pepper
Instructions
- Heat oil or water in a large pot over medium heat. Sauté diced onions and cumin seeds for 5-7 minutes until browned.
- Stir in minced ginger and garlic; cook for another 1-2 minutes until fragrant.
- Add turmeric, garam masala, and cayenne pepper; cook for an additional 1-2 minutes.
- Stir in diced tomatoes and cook for about 4 minutes until they soften.
- Mix in chickpeas and coconut milk. Bring to a gentle simmer; cover and let it cook on low heat for 25-30 minutes.
- Serve warm over rice or quinoa, garnished with fresh cilantro.
