  • 2 medium onions (diced)
  • 4 garlic cloves (minced)
  • 2 cans diced tomatoes (14.5 oz each)
  • 1 can kidney beans (15 oz, drained and rinsed)
  • 2 tablespoons tomato paste
  • 2 cups beef broth or beer
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. In a large pot over medium-high heat, brown the ground beef until no longer pink.
  2. Add diced onions and minced garlic; sauté until onions are translucent (about 5 minutes).
  3. Stir in chili powder, cumin, oregano, salt, pepper, and cayenne; cook for about 1 minute.
  4. Add diced tomatoes, kidney beans, tomato paste, and beef broth; mix well.
  5. Bring to a boil then reduce heat; let simmer for at least 1 hour.
