- 1 lb Ground Beef
- 1 medium Onion (diced)
- 14.5 oz Diced Tomatoes (canned, undrained)
- 16 oz Elbow Macaroni
- 2 cups Cheddar Cheese (shredded, divided)
- 2 Tbsp Taco Seasoning
- 1/2 cup Water
Instructions
- Cook elbow macaroni in boiling water until al dente; drain.
- In a large skillet, brown ground beef with diced onion until no longer pink; drain fat.
- Stir in diced tomatoes, taco seasoning, and water; simmer for 5 minutes.
- Mix cooked macaroni with the meat mixture until well combined.

- Top with remaining meat mixture and bake covered at 350°F for 30 minutes. Remove foil, add remaining cheese, and bake uncovered for an additional 10 minutes.
