Ingredients
- 8 oz cooked and shredded chicken breast
- 1/2 cup black beans (canned, rinsed and drained)
- 1/2 cup corn (fresh, canned, or thawed frozen)
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 1 jalapeno pepper (diced)
- 1 cup shredded Monterey Jack cheese
- 10–12 egg roll wrappers
- Oil for frying
Instructions
- In a mixing bowl, combine the chicken, black beans, corn, bell pepper, green onions, jalapeno, and cheese. Mix in seasonings: cumin, chili powder, salt, and cayenne.
- Place about two tablespoons of filling on each egg roll wrapper. Fold and seal tightly using water.
- Heat oil in a frying pan over medium heat. Fry eggrolls until golden brown (about 3-5 minutes per side). Drain on paper towels.
