Instructions
- Whisk together the smoky chipotle aioli ingredients in a food processor.
- Clean, peel, and cube sweet potatoes into bite-sized pieces.
- Boil cubed sweet potatoes in a medium pot of water for 6-10 minutes until fork-tender.
- Drain and toss warm sweet potatoes with the chipotle aioli in a mixing bowl.
- Gently fold in chopped jalapeno and red bell pepper; sprinkle with cilantro, paprika, and salt as desired.
