  • 23 TBSP chopped jalapeno pepper
  • 2 TBSP chopped red bell pepper
  • Fresh cilantro
  • Paprika
  • Salt

Instructions

  1. Whisk together the smoky chipotle aioli ingredients in a food processor.
  2. Clean, peel, and cube sweet potatoes into bite-sized pieces.
  3. Boil cubed sweet potatoes in a medium pot of water for 6-10 minutes until fork-tender.

  5. Gently fold in chopped jalapeno and red bell pepper; sprinkle with cilantro, paprika, and salt as desired.
