  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 tablespoons baking cocoa powder
  • 5 large eggs
  • 3/4 cup heavy whipping cream
  • 2 teaspoons vanilla extract
  • 6 oz semi-sweet chocolate bar
  • 2/3 cup heavy whipping cream
  • 2 tablespoons butter
  • Reddi-Wip (for garnish)
  • chocolate syrup (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed graham crackers, sugar, cocoa powder, and melted butter. Press into the bottom of a springform pan.
  3. Melt the bittersweet chocolate; beat together cream cheese, sugars, and cocoa in another bowl until smooth. Add eggs one at a time, mixing well after each.
  4. Stir in heavy whipping cream and vanilla; fold in melted chocolate gently.
  5. Pour over the crust and bake for about 130 minutes or until slightly jiggly in the center. Cool gradually in the oven.
  6. For the ganache, heat heavy whipping cream until simmering, then stir in chocolate pieces and melted butter until smooth.
  7. Pour ganache over cooled cheesecake; refrigerate overnight before serving with whipped cream and chocolate syrup.
