  • 1/2 cup (122 g) canned pumpkin puree (Libby's canned pumpkin)
  • 1 cup (125 g) all-purpose flour, sifted
  • 1/4 cup + 2 tbsp (30 g) black cocoa powder, sifted
  • 2 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (122 g) canned pumpkin puree dried to 1/4 cup (45 g) (Libby's canned pumpkin)
  • 1 cup (224 g) unsalted butter, softened
  • 4 oz (113 g) cream cheese, cold
  • 2 tsp pumpkin pie spice
  • 3 cups (390 g) powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a bowl, cream together softened butter and sugar until fluffy. Add eggs, vanilla, milk, sour cream, and pumpkin puree; mix well.
  3. Sift together flour, cocoa powder, pumpkin pie spice, baking powder, baking soda, and salt in another bowl.
  4. Gradually combine dry ingredients into the wet mixture without overmixing.
  5. Fill each muffin cup about two-thirds full with batter and bake for 18 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool before frosting with prepared pumpkin spice cream cheese frosting.
