  • 1/2 cup unsweetened Dutch-process cocoa powder
  • 2 tablespoons flour
  • 1/2 cup low-fat milk
  • 1/2 cup water
  • 4 egg whites
  • Pinch of cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract
  • Powdered sugar (for serving)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray soufflé dishes with cooking spray; optionally dust with granulated sugar.
  3. In a mixing bowl, whisk together powdered sugar, cocoa powder, and flour.
  4. In another bowl, combine milk, water, egg yolks, and vanilla extract until smooth.
  5. Gradually mix wet ingredients into dry until well combined.
  6. Beat egg whites with cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form.
  7. Fold one-third of the egg whites into the chocolate mixture, then gently fold in remaining egg whites.
  8. Pour batter into ramekins and bake for about 20 minutes or until puffed and set but still slightly jiggly in the center.
  9. Dust with powdered sugar before serving warm.
