Instructions

  1. Preheat your oven to 350°F. Grease an 8-inch springform pan and line with parchment paper.
  2. In a bowl, mix dry ingredients for the crumb topping, then add melted butter until moist.
  3. In a large bowl, cream together softened butter and sugars until fluffy. Add egg, vanilla, and sour cream; mix well.
  4. In a separate bowl, combine dry ingredients for the cake batter; gradually add to the wet mixture until just combined.
  5. Spread half the batter in the pan, layer with chopped apples, sprinkle with crumb topping, then add remaining batter followed by more crumbs.
  6. Bake for 35–40 minutes until a toothpick comes out clean.
