  • 5 strips bacon
  • 3 1/2 lbs beef chuck
  • 4 tablespoons unsalted butter
  • 1 yellow onion
  • 3 large carrots
  • 5 garlic cloves
  • 2 cups Burgundy wine
  • 2 cups beef stock
  • Fresh thyme and bay leaves
  • Cremini mushrooms and pearl onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, cook chopped bacon until browned. Remove with a slotted spoon.
  3. Increase heat to medium-high and sear seasoned beef cubes until browned on all sides. Remove from pot.
  4. Sauté onions and carrots in remaining butter, then add garlic, tomato paste, and flour; stir well.
  5. Pour in wine, scrape up browned bits, add beef broth and herbs, then return beef and bacon to pot.
  6. Cover and bake for 2 ½ hours.
  7. Halfway through, sauté mushrooms and pearl onions separately; add them to the stew before the final cooking stage.
  8. Let rest for 30 minutes before serving.
