Ingredients
- 1 lb dried red beans
- 1 ham bone (or ham hocks)
- 14 oz andouille sausage (smoked, sliced)
- ½ lb smoked ham (cubed)
- 1 medium onion (chopped)
- 2 jalapeños (finely chopped)
- 6 cloves garlic (minced)
- ¼ cup red wine vinegar
- 2 tbsp whole grain mustard
- Steamed white rice (for serving)
Instructions
- Soak the beans overnight in plenty of water.
- In a large stock pot, combine soaked beans, ham bone, and bay leaves with 1 gallon of water. Bring to a simmer.
- In a skillet, heat oil over medium-high heat. Cook sausage and ham until browned.
- Add onion and jalapeños; sauté until softened.
- Stir in diced tomato, garlic, mustard, vinegar, salt, thyme, black pepper, and cayenne; cook until hot.
- Combine sausage mixture with the pot of beans; simmer uncovered for about 3 hours.
- Mash some beans against the pot to thicken before serving.
