Ingredients

  • 1 lb dried red beans
  • 1 ham bone (or ham hocks)
  • 14 oz andouille sausage (smoked, sliced)
  • ½ lb smoked ham (cubed)
  • 1 medium onion (chopped)
  • 2 jalapeños (finely chopped)
  • 6 cloves garlic (minced)
  • ¼ cup red wine vinegar
  • 2 tbsp whole grain mustard
  • Steamed white rice (for serving)

Instructions

  1. Soak the beans overnight in plenty of water.
  2. In a large stock pot, combine soaked beans, ham bone, and bay leaves with 1 gallon of water. Bring to a simmer.
  3. In a skillet, heat oil over medium-high heat. Cook sausage and ham until browned.
  4. Add onion and jalapeños; sauté until softened.
  5. Stir in diced tomato, garlic, mustard, vinegar, salt, thyme, black pepper, and cayenne; cook until hot.
  6. Combine sausage mixture with the pot of beans; simmer uncovered for about 3 hours.
  7. Mash some beans against the pot to thicken before serving.
