  • 1 pound salmon fillets (or your preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano pepper (or 2 jalapeños), sliced
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • ¾ to 1 cup water

Instructions

  1. In a large sauté pan over medium heat, add olive oil and sauté the bell pepper, serrano pepper, garlic, and carrots for about 3 minutes. Stir in tomato paste and spices; cook for an additional 3 minutes.
  2. Add chopped cilantro and water; cover and simmer for 12–15 minutes until vegetables are tender.
  3. Season salmon with salt and place it in the pan, ensuring it's coated with sauce. Cook on low flame for 20–25 minutes, spooning sauce over the fish halfway through.
  4. Garnish with lemon slices before serving.
