  • 2 large eggs

  • 1 bunch scallions, thinly sliced
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • ¾ teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon crushed red-pepper flakes
  • 1 teaspoon baking powder
  • ¼ cup half-and-half
  • ⅓ cup grated Parmesan cheese
  • 3 tablespoons vegetable oil
  • Flaky sea salt and freshly ground black pepper, as needed

Instructions

  1. In a large mixing bowl, combine corn, scallions, parsley, basil, salt, pepper, and red-pepper flakes. Mix in flour and baking powder until combined.
  2. Add whisked eggs and half-and-half to form a thick batter; gently fold in mozzarella and Parmesan.
  3. Heat vegetable oil in a skillet over medium heat. Scoop ¼-cup portions of batter into the skillet. Cook until golden brown (about 3 minutes per side). Transfer cooked fritters to paper towel-lined baking sheet.
  4. Arrange fritters on a platter with peach slices, tomato slices, and mozzarella slices. Drizzle with olive oil and sprinkle with torn basil leaves.
