  • 2 cups cottage cheese
  • 1 cup shredded cheese (your choice)
  • 1 cup chopped spinach
  • ½ cup diced bell pepper
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large mixing bowl, whisk together the eggs until well beaten. Stir in the cottage cheese until fully combined.
  3. Add the chopped spinach, diced bell pepper, chopped onion, garlic powder, onion powder, salt, and black pepper to the egg mixture. Mix until evenly combined.
  4. Gently fold in the shredded cheese. If desired, reserve some cheese for topping before baking.
  5. Pour the mixture into the greased baking dish. Sprinkle reserved cheese on top if using. Bake for 40-45 minutes or until set and golden brown.
