  • 1/4 cup applesauce (for Regular Chocolate Chip flavor)
  • 2 Tablespoons coconut oil (melted and cooled, for Regular Chocolate Chip flavor)
  • 1/4 teaspoon salt (for Regular Chocolate Chip flavor)

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with liners.
  2. In a blender, combine cottage cheese, maple syrup, vanilla extract, pumpkin puree (if using), and eggs; blend until smooth.
  3. In a mixing bowl, mix flour, baking powder, and salt; gently fold in the wet mixture.
  4. Add chocolate chips and fold until evenly distributed.
  5. Fill muffin liners two-thirds full with batter and bake for 25–30 minutes.
