- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1/3 cup light brown sugar
- 2/3 cup white sugar
- 2 teaspoons cinnamon powder
- 1 1/2 teaspoons vanilla extract
- 1 3/4 teaspoons baking powder
- 1/2 cup milk or almond milk
Instructions

- In one bowl, mix together light brown sugar and one teaspoon of cinnamon. In another bowl, combine diced apples with granulated sugar and remaining cinnamon.

- Combine dry ingredients (flour and baking powder) and mix into the creamed mixture along with milk until smooth.
