  • 1 whole rotisserie chicken (shredded)
  • 4 cups broccoli florets

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup Parmesan cheese (grated)
  • 1/2 cup mozzarella cheese (shredded)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook the penne pasta according to package directions in salted water. Add broccoli florets during the last 3 minutes of cooking.
  2. Reserve 1 cup of pasta water before draining the pasta and broccoli. Set aside.
  3. In a skillet, heat olive oil and butter over medium-low heat. Sauté onions until softened; add garlic for an additional 30 seconds.
  4. Stir in heavy cream and chicken broth, simmer for a few minutes.
  5. Remove from heat and whisk in cheeses until smooth. Season with spices.
  6. Combine drained pasta and broccoli with the sauce, adding shredded chicken last.
  7. Adjust consistency with reserved pasta water as needed.
